Ingredients:
-1 lb ground beef (optional)
-1 onion, chopped (optional)
-1 zucchini chopped (optional)
-1 red pepper, chopped (optional)
- 6 or 7 mushrooms, sliced (optional)
-1/2 eggplant, cubed (optional)
- 2 cloves garlic, crushed
-2 cans tomatoes
-olive oil
-1/2 cup red wine
-salt, pepper
-optional: basil, rosemary, oregano, thyme (choose according to taste!)
In a large saucepan, brown ground beef and veggies in olive oil, starting with zucchini, onions and eggplant and doing mushrooms and peppers last. Add tomatoes and let simmer for a few minutes, then squish with a potato masher. Add red wine, herbs and spices and let simmer covered for about 30 minutes on low heat.

Pasta Alfredo with Turkey Strips and Zucchini
-1 Package Pasta (your choice!) or 1 recipe of home made pasta
-1 tbsp butter, white wine (to taste)
-2-3 garlic cloves, crushed
-1/4 cup cream cheese
-1/2 cup parmesan
-1/2 cup cream
-salt, pepper, thyme (to taste)
-2 large turkey breasts, sliced into strips
-1/2 zucchini, chopped and quartered
-1/2 cup white wine
-thyme, salt and pepper (to taste)
Start pasta as directed on the package (or recipe if you're making it from scratch)
melt butter in a sauce pan, add garlic and wine. Add cream, cheeses and spices and stir, adding more wine to taste. When the sauce reaches a creamy consistency, take off heat, cover and set aside.
in a frying pan, heat up some wine and a bit of butter, and brown turkey. Add zucchini and sauté until both turkey and zucchini are cooked thoroughly. Add spices.
Stir sauce into cooked pasta, top with the turkey and zucchini

Red Wine Barbecue Steak Sauce
1/4 cup plain BBQ Sauce
1/4 cup dry red wine
1 tsp dried rosemary (or 2 tsp chopped fresh rosemary)
2 cloves garlic, crushed
pinch of salt and pepper
2-3 medium steaks, either beef, bison, venison, lamb, ostrich (basically, any red meat!)
Combine all ingredients except steaks in a small bowl and refrigerate for several hours (you can leave it overnight, or prepare in the morning for the evening) to allow flavours to blend. Pour the entire mixture over steaks, allowing the extra to pool at the bottom (best to do this in something with a bit of a lip so liquid doesn't pour over the edge!) Let marinate for 30 minutes to an hour. Grill or barbecue as desired!
